One-Tray Oven Roasted Vegetables

Only one pan and five vegetables are needed for a super simple and nutritious one-tray oven roasted vegetable recipe.
There’s something very satisfying about throwing a tray of vegetables into the oven and letting them change into something rich, caramelised, and flavourful. This recipe is nice and simple: a mix of sweet potato, red pepper, onion, and broccoli, roasted until tender with crisp edges. A sprinkle of cumin, paprika, and chilli brings just the right amount of warmth and spice, making the veg taste far more exciting than the effort involved.
With hardly any prep and only one tray to wash up, it’s perfect for busy evenings or when you just want something wholesome but easy.
What you need
- red onion
- red pepper
- sweet potato
- broccoli
- cumin and paprika
- chilli
Ingredients & Substitutions

Red onion: Adds sweetness as it softens and caramelises. Swap for yellow or white onion if that’s what you’ve got.

Red pepper: Becomes soft and slightly smoky in the oven. Yellow or orange peppers work just as well.

Sweet potato: Brings a hearty, sweet element. Butternut squash, carrots, or parsnip can be used instead.

Broccoli: Roasts quickly and takes on a lovely crispness. Cauliflower is a good alternative.

Spices: Cumin and paprika add depth, while chilli gives a gentle kick. Adjust the spice to your liking, or try smoked paprika for a bolder flavour.
How to make one-tray oven roasted vegetables
Preheat the oven to 220C.
Cut the red onion into wedges, the potato and pepper into chunks, and the broccoli into florets. Add everything to a baking tray.
Sprinkle over the spices and salt and pepper. Drizzle over the olive oil, and mix together with hands.
Add to the oven, and roast for 30 minutes, turning once in between.
Serve hot or cold with a drizzle of tahini, or dipped into some mashed avocado or hummus.
You can adapt this recipe to use whatever vegetables you like, or you have in your fridge. It’s best to include a starchy vegetable such as potato or butternut squash to keep it filling if eating alone.
Season with whatever spices you enjoy. Adding garlic and mixed herbs is another way of seasoning that I regularly use for roasted veg.
Add to pasta, serve with some rice or some bean burgers to use this recipe as a tasty side dish.

- 1 broccoli (cut into florets)
- 1 tsp cumin
- 1 tsp paprika
- ½ tsp chilli
- salt and pepper
- olive oil
Serve with
- tahini or plain yogurt
- avocado
- hummus
Instructions
- Preheat the oven to 220C.
- Add the red onion wedges , potato and pepper and broccoli to a baking tray.
- Sprinkle over the spices and salt and pepper. Drizzle over the olive oil, and mix together with hands.
- Place in the oven, and roast for 30 minutes, turning once halfway
- Serve hot or cold with a drizzle of tahini or plain vegan yogurt or dipped into some mashed avocado or hummus.
