A delicious and classic Italian thick soup packed with vegetables, beans and pasta. It is a crowd-pleaser that is packed with nutrition because of all the vegetables. For my version Iβve used cabbage, courgette, celery, carrot, and spinach. It of course starts with the base of a soffritto, which involves cooking onion, carrot and celery, slowly to release a delicious aroma used for the base of many sauces and stews in Italian recipes. From there weβve added our vegetables, which you can adapt according to the seasons, along with the protein from the beans, and carbohydrates from the pasta.
The daffodils are out, and the first signs of sunshine and mild weather are here - thank goodness! That means itβs nearly time Easter. Although we may not be able to see friends and family as we normally might we can still create a stress-free Easter lunch for those in our own household (unless you plan to brave the weather and create an outdoor lunch). I know that cooking a traditional roast dinner can be tricky to master so Iβve created a super easy to follow guide on how to put together your vegan Easter meal.
