Tofu in a smoothie? You heard it right! This blueberry smoothie tastes as creamy and smooth as yoghurt.

What you need

  • silken tofu
  • banana
  • medjool/halawi dates
  • frozen blueberries
  • chia seeds
  • soy milk

How to make blueberry tofu smoothie

Add your tofu, banana, blueberries, seeds and milk to a blender.

Pit the dates and add them too.

Blend to create a delicious tofu smoothie and serve!

This principle will work with any fruit, so give it a try with mango, strawberries, raspberries, whatever you fancy! The tofu really makes it taste like a delicious yoghurt.

Try using this recipe for a smoothie bowl, topping with some fresh fruit and my maple granola.

Blueberry Tofu Smoothie

Ingredients

  • 175 g silken tofu
  • 1 banana
  • 2 medjool (or halawi dates, pitted )
  • frozen blueberries (a handful)
  • 1 tbsp chia seeds
  • 175 ml plant milk

Instructions 

  • Add your tofu, banana, blueberries, seeds, dates and milk to a blender.
  • Blend to create a delicious tofu smoothie and serve!

    Delicious, healthy and so easy! Thanks Madeleine! I’ve gotten a bit obsessed with this recipe and have had it almost every day this week…. I do change the amount of bananas & dates I put in depending on how sweet my tooth is that day, and also made it once without the berries or bananas as I had run out and it was still delicious!

    I made this once last summer and today after gardening all morning I made this smoothie as I wanted something light but filling for lunch so I made this with some peanut butter on toast! Didn’t have any dates but it still tasted yum!

    Dont have soy milk, doe it matter if I use oatmilk instead?
