Vegan Protein Cookies

Vegan Protein Cookies

Vegan Protein Cookies are delicious bites of plant based protein to be enjoyed as a filling snack

prep time 5-10 mins total time 20-25 mins makes 6 cookies


ingredients

  • 1 cup (90g) oats

  • 1/4 cup (80g) maple syrup

  • 1/4 cup (65g) peanut butter

  • 1 scoop protein powder (I used MyVegan protein powder*)

  • 1 tsp cinnamon

  • 1/4 cup (60-65ml) milk

  • Pinch of salt

  • 1/4 cup (40g) chocolate

 

method 1

  1. Preheat your oven to 180C (350F).

  2. Add all of the ingredients, except the chocolate, into a food processor and blend until it comes together to form a dough.

  3. Chop up the chocolate into small chunks.

  4. Combine the dough with the chocolate and form 6 cookies.

  5. Add the vegan protein cookies to a lined baking tray and bake in the oven for 12-15 minutes.

  6. Leave to cool (if you’re disciplined enough!), and enjoy with a cup of tea :)
