Braised Red Cabbage
My favourite part of a Christmas dinner, sweet braised red cabbage! This easy red cabbage works perfectly as a part of a roast dinner alongside my nut roast, carrots, parsnips, roast potatoes and brussel sprouts.
What you need
- red cabbage
- olive oil
- vegan butter
- onion
- apple cider vinegar
- light brown sugar
- apple
- sultanas
How to make braised red cabbage
Chop your red cabbage in half, remove the stalk and then shred into thin slices. Chop the slices into thirds. Thinly slice the onion. Heat up a pan with the olive oil and butter. Now add in the onion and cook until transparent and softened. At this point you want to add in the shredded cabbage and toss through, cooking for around 3 minutes. Add in a dash of water, the apple cider vinegar and the sugar. Put the lid on to the pan, and cook for 10-15 minutes. Meanwhile, thinly slice up an apple, and then add to the pan alongside the sultanas. Cook for at least 1 hour. The longer you cook it for the softer it’ll get (I often cook for up to 2-3 hours).
