Super Easy Super Green Pasta

Super Easy Super Green Pasta

Not keen on greens? Blend them up in this super green pesto!

ingredients

super green pesto

  • 1 garlic clove

  • Juice of a lemon

  • 1/4 cup pine nuts

  • Bunch of basil

  • Handful of spinach 

  • Handful of kale

  • Glug of olive oil

  • Salt and pepper

  • Nutritional yeast 

serve with

  • 300g pasta

  • Handful of spinach

 

method

  1. Put your pasta on to cook.

  2. Blend together the pesto ingredients together in a food processor or powerful blender. If it is having a hard time, add in some more olive oil or a dash of water. Make sure to give it a taste and adjust the seasoning.

  3. When the pasta is al dente, drain the water, but leave a little bit of the pasta water in the pan.

  4. Return the pasta to the stove over a very low heat and spoon in the pesto. Add bit by bit to make it as pesto-y as you like! I used most of the pesto for this recipe because I like it really saucy.

  5. Add a final handful of spinach and stir through until it has wilted. Serve and enjoy!


notes

  • This pesto doesn’t only have to be used on pasta, but can be used in sandwiches, wraps, on pizzas, as a dressing etc. etc.

  • I used spinach at the end of this recipe to make it super easy as it requires no separate cooking. However, you can use whatever vegetables you like in this dish. Broccoli, tomatoes, asparagus, peppers or mushrooms would be some great options.
