Refreshing, sharp and tropical enough to transport you to a beautiful hot country!

I’m yet to find a more refreshing dessert. Nothing beats a cooling creamy mango sorbet on a hot summers day, especially when it only takes 5 minutes to make. Sorbets are a very easy vegan dessert to make as the ingredients are so simple, and you don’t even need an ice cream maker. This one is dairy free and you only need two ingredients.

The 2 ingredients you’ll need to make this 5 minute vegan snack are mango and coconut milk. The frozen mango when blended creates the most divine creamy texture, which when combined with coconut milk turns into a deliciously creamy sorbet.

I like to add a squeeze of fresh lime to really bring out the flavours, but this is totally optional.

If you don’t have any frozen mango just use a fresh one and make your own. All you need to do is remove the skins, cut into small chunks, lay out separated on a baking sheet lined with parchment paper and freeze the mango chunks until completely solid. Easy!

Once the mixture has been blended you can eat immediately OR put in the freezer for a few hours until firm. It really depends on how you like to eat your sorbet as both options are as delicious as each other.

Ingredients

  • 3 cups (300g) frozen mango

  • 1 cup (approx 225ml) coconut milk

  • Squeeze of a lime (optional)

METHOD

  1. Blend your mango, coconut milk and lime juice in a high speed blender or food processor

  2. Serve, or scoop into reusable container and freeze for another time.

NOTES

  • This principle will work for any fruit, such as frozen berries or frozen pineapple. Experiment with your favourite flavours!

  • Make sure to use a high speed powerful blender or food processor as this recipe isn’t using as much liquid as a normal smoothie. If yours is struggling, simply add a touch more coconut milk until it blends into a smooth sorbet.
