Time is a scarce resource these days so prep ahead and organise your meals in advance. I’ve got a delicious selection of the best vegan meal prep recipes perfect for making ahead of time. They’re budget friendly, super easy and full of fibre and plant-based goodness.

Warming soups

Soups are perfect for vegan meal prep as you can use them for lunch and dinner. They also use up any leftover veg, freeze well and are so easy to make in bulk. Here are some of my favourites.
