Baked Banana Oats

Warm, comforting banana baked oats loaded with chocolate chips and crunchy walnuts, it’s an easy make-ahead breakfast or cosy snack.

Ingredients

  • 175 g oats
  • 375 ml non-dairy milk
  • 3 bananas ((2 mashed, 1 sliced for the topping))
  • 1 tsp vanilla extract
  • 100 g walnuts (roughly chopped )
  • 50 g vegan chocolate chips ((reserve a small handful for the topping))
  • 2 tsp cinnamon
  • 2 tbsp maple syrup
  • pinch of salt
  • 1 tbsp demerara sugar

Instructions 

  • Preheat the oven to 180°C/350°F.
  • Add the mashed bananas, oats, plant milk, walnuts, most of the chocolate chips, cinnamon and maple syrup to a baking dish and mix well.
  • Bake for 10–15 minutes, until the top is beginning to set.
  • Remove from the oven and top with the sliced banana and remaining chocolate chips. Sprinkle the demerara sugar on top.
  • Return to the oven and bake for a further 10–15 minutes, until golden on top and cooked through. Serve warm.

Notes

  • Chopped pecans or hazelnuts work well instead of walnuts.
  • For a softer texture, let the oats sit for 5 minutes before baking so they absorb some of the milk.
  • Delicious served with yoghurt, extra maple syrup or berries.
