What I Eat in a Week as a Vegan

Ever wondered what a week of vegan meals looks like? Join me on YouTube for a detailed look at what I eat in a week as a vegan. From quick breakfasts to hearty dinners and plenty of snacks in between, I’ll be sharing my entire weekly eating habits! To coincide with this video I’m sharing all of the recipes mentioned plus a few more of my favourites for good measure. Whether you’re vegan, plant-curious, or just looking for new recipe ideas, this peek into my week will give you plenty of inspiration for your own meals.

Vegan Potato Curry
Potato, Spinach & Tomato Curry
One of the most budget-friendly meals that we enjoy in our house is curry, and this potato, spinach and tomato curry is £2.90 to make, or just 72p per portion. Sticking to basic ingredients and pantry spices keeps costs down. The coconut yoghurt adds a wonderful creaminess, and the spinach makes it as nutritious as it is delicious.

Butternut Squash and Mushroom Pie
This tasty autumnal recipe combines the rich, buttery sweetness of roasted butternut squash with the earthy depth of mushrooms, all wrapped in a flaky, golden crust and topped off with a dollop of aromatic pesto. It’s a hearty, plant-based pie that’s perfect for any meal, whether you’re hosting a cozy dinner party or just looking for a nutritious weeknight dinner.

Easy Baked Tofu
Crispy and golden on the outisde, and meaty on the inside. The key to perfectly baked tofu is making sure you've pressed your tofu to remove any excess moisture (I use a tofu press, but you can also use kitchen towel and some heavy books). This allows it to develop a deliciously crispy skin with a pillowy centre. Baking your tofu is also the simplest and easiest way to get it right every time.

Mixed Berry Oatmeal
This is my favourite every day easy porridge recipe. Using frozen berries makes it easy to whip up anytime as I always have them stocked (and I'd recommend you do too!). Chia seeds add some extra nutritional value, cinnamon some flavour, and maple syrup some sweetness!

Vegan Omelette
Did you know that you can make an omelette alternative with gram flour or besan (chickpea flour)? Chickpea flour is a staple ingredient in Indian cooking, and is often used for a besan chilla (savoury pancake). This savoury pancake is a great alternative for those who are not eating eggs, with the addition of kala namak (black salt) that has an egg-y taste.
