Vegan Ploughman’s Baguette
Sometimes we struggle for ideas when it comes to sandwich fillers as a vegan, so why not try a classic ploughman’s?
This is less of a recipe and more of an idea to spark your taste buds as a vegan. I know that when I first went vegan, I really struggled to think of what to put in my sandwiches apart from some hummus and cucumber. There are so many more incredible ingredients on the market now when it comes to vegan cheeses, mayonnaise, and even coleslaw, that it makes life a lot easier!
The ingredients, as always, are super accessible and easy. Pantry staples! All you’ll need is:

2 long batons/baguettes

3⁄4 slices Vegan cheese

2 gherkins, sliced

½ large tomato, sliced

½ apple, sliced
-
Lettuce leaves, washed (we used romaine)

Vegan coleslaw
Layer up your roll starting with vegan butter, lettuce, your favourite vegan cheese (we used violife’s smoked slices), slices of gherkin, apples, tomatoes, and finally top with coleslaw.

Vegan Ploughmans Baguette
Ingredients
- 2 long baton type rolls
- 4 vegan cheese slices
- 2 gherkins (sliced)
- 1/2 tomatoes (sliced)
- 1/2 apple (sliced)
- lettuce leaves (washed)
- vegan coleslaw
Instructions
- Cut the roll in half and spread with vegan butter.
- Place the cheese slices in the roll, top with the pickle, then add the sliced tomatoes and then sliced gherkins.
- Add the lettuce, top that with the coleslaw and finally the sliced apple.

Delicious sandwich! I’m not from the UK and therefore unfamiliar with a classic ploughman’s, but the flavours go really well together, and it makes for an easy lunch to quickly assemble. Made my own vegan coleslaw and used cumin-flavoured vegan cheese for mine. Will definitely be making this again! (Oh and: the instructions said to add mayo, but that is not in the ingredient list 🙂
