Easy Vegan Gravy

When it comes to Christmas dinner, a delicious nut roast often steals the show—but let’s be honest, gravy is the unsung hero that ties it all together. You can’t have a roast without a good gravy. In my opinion it’s an essential part of any festive dinner, whether you’re drizzling it over ultimate roast potatoes or pouring on top of roasted carrots with maple cinnamon butter.
This recipe takes the intense woodsy flavour of dried porcini mushrooms to create a smooth and bold tasting sauce that puts shop-bought gravy to shame. It’s proof that you don’t need animal products to create a ‘meaty’ gravy that’s luxurious and full of depth. This vegan Christmas gravy is quick to whip up, customisable to your taste and uses easy to find ingredients.

Substitution and Ingredient Notes
Vegan butter: Any butter will work, my favourite is Naturli.
Onion, carrot and celery: Just your classic ‘mirepoix’. Ideally you don’t want to substitute any of these ingredients out as it creates the perfect base; sweetness from the carrots, bitterness from the celery and a umami savoury taste from the onions.
Bay leaves: I chose to use bay leaves but you could substitute for something like rosemary or thyme.
Porcini mushrooms: If you can’t get hold of dried porcini mushrooms you can use any dried variety. You can even use fresh, in a pinch. Just add them directly the pan with the onions and other veg. Make sure to pre the porcini mushrooms by soaking them first, and save that liquid!
Vegetable stock: You can use store bought or homemade, they both work for this recipe. I like to use the Kallo ones for a veggie option.
Cornflour: If you don’t have any cornflour you can substitute for plain all-purpose flour.
Cranberry sauce: I used M&S Cranberry sauce but any will do.
Dark soy sauce: Dark soy sauce is a pantry staple that adds depth of colour, but also a sweet saltiness to the gravy that increases the umami flavour.
Red wine vinegar: I love a classic red wine vinegar for my gravy as it works so perfectly with a roast, but you could sub this for balsamic or apple cider.

How to make vegan Christmas gravy
First you want to make sure you’ve started by soaking your dried porcini in water mushrooms for later.
Add the vegan butter and vegetable oil to large saucepan on a medium heat. Once the butter and oil has melted, add the onion, carrots and celery. Fry for about 10 minutes, stirring often, until the vegetables start to soften and darken in colour.


Then add the garlic and bay leaves and fry for a minute, stirring often. Next add the stock to the pan, along with the soy sauce, cranberry sauce, porcini mushrooms (including the juice) and finally the red wine vinegar.
Bring the gravy to a boil, then reduce the heat to low and add the slaked cornflour (this just means to mix the cornflour with a little water until smooth first, so it doesn’t become lumpy in your gravy) gradually. Stir consistently with a small whisk, until you reach your desired thickness. Once it’s come to a boil, reduce to simmer and cook for two minutes more to thicken. Add more cornflour if you want it a little thicker.

Remove from the heat and pour the gravy through a fine sieve to serve.

Now it’s time to enjoy! Serve as the finishing touch to your Christmas meal, doused on top of my butternut squash and cranberry wreath my ultimate roast potatoes, roasted parmesan parsnips, roasted carrots with maple cinnamon butter and roasted brussels sprouts with balsamic and cranberries

Vegan Christmas Gravy
Ingredients
- 1 knob vegan butter
- 2 tbsp vegetable oil
- 1 onion (chopped)
- 1 carrot (diced)
- 1 stick of celery (diced)
- 2 bay leaves
- 2 cloves of garlic
- 1 handful porcini mushrooms (soaked in water for 10 minutes)
- 750 ml vegetable stock
- 2 heaped tbsp cornflour (slaked in a little cold water to make a loose paste)
- 1 tbsp cranberry sauce
- 1 tbsp dark soy sauce
- 1 tbsp red wine vinegar
- Salt and black pepper to taste
Instructions
- Add the butter and vegetable oil to large saucepan on a medium heat. Once the butter and oil is melted, add the onion, carrots and celery. Fry for approximately 10 minutes, stirring often until the onion is beginning to soften and brown.
- Then add the garlic and bay leaves and fry for a minute, stirring often. Pour the stock into the pan.
- Next add the soy sauce, cranberry sauce, porcini mushrooms (including the juice), and red wine vinegar. Stir everything through to combine.
- Bring the gravy to the boil, then reduce the heat to low and gradually add the slaked cornflour. Stir continusously using a small whisk as it comes to a boil, then reduce to simmer and cook for two minutes more to thicken. If you want a a thicker consistency, add some more cornflour.
- Remove from the heat, pass the gravy through a sieve and serve hot to pour over your meal.
