Vegan Feta Cheese

If you’ve ever missed the salty, tangy bite of feta since going plant-based — you’re not alone. This homemade vegan feta cheese is briny, crumbly, full of flavour, and surprisingly easy to make.
It’s perfect for crumbling over Greek salads, stuffing into wraps, or serving alongside olives and roasted veg. Best of all, it’s made with simple ingredients and doesn’t require any fancy equipment.
The base of this vegan feta is firm tofu — it gives that soft-yet-sliceable texture, with enough structure to hold up in salads or cubes. I infuse it with flavour using a mix of olive oil, lemon juice, apple cider vinegar, olive brine, and nutritional yeast to mimic feta’s signature salty, sharp tang.
The garlic, oregano, sea salt and black pepper add depth, while agar agar helps set it into a firmer block if you want a more “cheese-like” result.
What you need to make vegan feta cheese
For the plant-powered vegan feta cheese
- firm tofu
- olive oil
- olive brine juice
- lemon
- apple cider vinegar
- nutritional yeast
- garlic
- dried oregano
- agar agar

Substitution and Ingredient Notes
Olive brine: You can swap this out for a bit more vinegar and salt, thought the brine adds that authentic Mediterranean flavour.
Agar Agar: You can skip the agar if you’re happy with a marinated, crumbled texture rather than a set block.
Nutritional yeast: Adds a cheesy, savoury depth. If you don’t have any, you can skip it — or add a small splash of soy sauce or miso paste to the marinade for extra umami.
How to make
Add all of the ingredients except the agar agar to a food processor and blend. Taste and adjust seasoning.

In a pan, add one cup of water and the agar agar powder. Bring to a boil and continuously stir. Once boiling, set a timer for 1 minute and continue to stir.
When the minute is up, quickly add the agar agar mixture to the food processor with the other ingredients and blitz. As soon as it’s smooth, pour the mixture into your prepared pan or tray and smooth the top. Make sure to do all of this as quickly as possible, as the agar agar sets fast.

Prepare a loaf pan or rectangle/square container (I used a square glass tray).
Refrigerate to set, and when completely ready, using a knife to loosen the sides, tip it onto a chopping board.

Slice into cubes.
