3 Ingredient vegan mac and cheese in bowl

Only three ingredients needed to make one of the best creations known to humankind – mac and cheese! This 3 ingredient vegan mac and cheese recipe skips any fuss or complicated ingredients. All you need are 3 things and it can all be made in one pot. Anyone can make this recipe, and it only takes 15 minutes – so it’s great for a quick weeknight dinner.

What you need:

  • Unsweetened non-dairy milk – go for plain, unsweetened plant-based milk. I used oat milk for this recipe as it has quite neutral creamy flavour.
  • Macaroni pasta – the classic shape but don’t be afraid to use another kind of pasta if you don’t have any macaroni – they all work well in this 3 ingredient recipe.
  • Vegan cheese – my favourite to use is cheddar or mozzerela. Or mix both together. I used VioLife.

How to make 3 Ingredient Vegan Mac & Cheese

In a pan, bring the non-dairy milk to a boil.

Add the macaroni, stir through, and lower to a medium heat. Keep stirring the pasta through occasionally to make sure it doesn’t stick, until the pasta is cooked (approx 10 mins). If it needs a splash of extra milk/water, then add this.

Remove from the heat. Finally, grate and stir through the cheese until completely melted. Serve and enjoy this quick and simple Vegan Mac & Cheese!

Like I mentioned in the method, don’t hesitate to add extra milk or water if the pasta needs it. Everyone has a preference on how they like their pasta cooked, so just add some more milk if you would like the pasta cooked for longer, or if it has evaporated too much!

  • 500 ml unsweetened non-dairy milk

    Hi. Ive made this recipe acouple of times now. My mum elderly mum loves it.
    I wondercabout Porton size. Is the nutritional value calculations for one person? As this full portion size makes 8 meals for my mum. So I wanted to work out the nutritional value for each Porton. I think I’ve done it now. But I wanted to ask you if your nutritional information is for one portion or more? Thanks. Becky

      I have updated the nutritional values for you, but keep in mind it will depend on the vegan cheese you use. This recipe serves 2-3 but if serving 8 it will need to be divided up.
