99p Student Vegan Stir Fry

Quick and simple at only 99p per serving, this cheap vegan student stir fry is great for midweek meals when you want something easy to whip up.
What you need
- garlic cloves
- ginger
- olive oil
- frozen vegetable stir fry
- soy sauce
- brown sugar
- sriracha
- noodles
How to make this student vegan stir fry
Put noodles on to cook according to packet instructions.
Chop garlic and ginger and add to pan over high heat with a drizzle of oil.
Add in the frozen vegetables and stir fry for a few minutes. You can also add a splash of water if it needs it.
Next, add in the soy sauce, sugar and sriracha and mix through.
When noodles are ready, drain, rinse and add into the stir fry.
Serve and enjoy with a squeeze of lemon and sprinkling of coriander.
If not on a budget, use whatever vegetables you like. My favourites for stir fries are mushrooms, broccoli, peppers and red onion.
Tofu would be a delicious addition to this dish!

- olive oil
- 300 g frozen vegetable stir fry
- 2 tbsp soy sauce
- 1 tbsp brown sugar
- 1 tbsp sriracha
- 200 g noodles (use rice noodles for GF)
- lemon (a squeeze of (optional))
- 2 tbsp coriander (finely chopped (optional))
Instructions

- Add the frozen vegetables and stir fry for a few minutes. Add a splash of water if it needs it.
- Addthe soy sauce, sugar and sriracha and mix through.
