15 Seasonal Recipes for Spring Vegetables

Eating with the seasons is not only enjoyable, but more sustainable and in tune with nature’s rhythms. Planning the vegetables and fruits you stock up on throughout the months of the year not only helps eat foods when they’re their most nutritious, but supports local farming. So I’ve put together a list of the fruit and vegetables that are in season during the months of March through to June, followed by 15 seasonal recipes for Spring vegetables for you to try so that you can eat seasonally this year.
Spring is a beautiful time of year for fruits and vegetables as the long months of a more limited winter harvest come to an end. Green vegetables and sweet fruits come into season and we start to enjoy the abundance of the warmer months. If you grow your own, you know just how exciting it is when you the growing season begins.
Of course nowadays we have the luxury of having access to foods throughout the year, but I find eating seasonally so much more satisfying. Not only because I know it is more sustainable and nutritious, but because it allows me to appreciate my food more. As a foodie it brings me so much joy knowing it is asapragus or rhubarb season for example, and I can make a delicious Asparagus Pesto Risotto or Rhubarb, Orange and Frangipane Galette.
