Roasted Pumpkin Seeds

What you need
- Raw pumpkin seeds
- Olive oil
- Salt and pepper
Cut open and scoop out the insides from your pumpkin using a spoon.
Separate the pulp from the seeds. This can feel a bit messy, but is fairly simple to do! Don’t worry too much either about removing every last bit of pumpkin flesh from the seeds, just do as much as you can without driving yourself mad.
Rinse thoroughly in a colander, and then lay out on a tray to dry. You can also pat the seeds dry with a cloth to remove excess moisture. I simply left mine out to dry for an hour or so under the sun from a window.
How to make roast pumpkin seeds
Preheat your oven to 180C (350F).
Drizzle the seeds with oil and season. I used salt and pepper, but you could use whatever spices you like.
Bake in oven for around 30 minutes, or until golden brown. To make sure they crisp up and don’t burn, stir them regularly in between baking so they are baked evenly.

Some other spices that would work nicely could be paprika, chilli or curry powder.
