Easy Vegan Pilau Rice

Take your rice to the next level with this restaurant style pilau rice recipe. With minimal effort you can transform your standard boiled rice to a beautifully spiced pilau side dish. Skipping the butter or ghee makes this vegan friendly too!

What you need to make pilau rice

  • Basmati rice
  • Onion
  • Cardamon pods
  • Cloves
  • Cinnamon stick
  • Turmeric
  • Cumin
  • Bay leaves
Heat your oil in a large pan, and start by adding the onion and cooking a few minutes until softened. This onion will add lots of flavour. Next you can cook off your spices: turmeric and cumin. Stir these through, using a little water if needed, and fry for a few minutes until fragrant. Now it’s time to add the water or stock (this is optional but adds lots of flavour), rice (make sure to use basmati), cinnamon stick, bay leaves, salt and cloves. All of these spices are what make pilau rice taste so delicious. Bring everything to the boil. Once boiling, turn the heat down to low and simmer for 10 minutes with the lid on.After 10 minutes, turn the heat off and allow your rice to steam for a final 10 minmutes. This will make your rice perfectly cooked. Fluff the rice up with a fork , remove the bay leaves, cinnamon stick and cloves, and serve. Serve your Pilau rice alongside Vegan Palek curry,  Coconut Cauliflower and Tomato Dahl and some tasty Courgette and Apple Raita.

Pilau Rice

Ingredients

  • 1 small onion (finely diced)
  • 1 tsp turmeric
  • 1/2 tsp cumin
  • 700 g water (can use vegetable stock for a bit more flavour)
  • 300 g basmati rice
  • 6 cardamon pods (bashed)
  • 2 cloves
  • 1 stick of cinnamon
  • sea salt
  • 2 bay leaves

Instructions 

  • Heat the oil in a large pan, then add the onion and cook a few minutes until softened.
  • Add in the turmeric and cumin and stir through. Cook the spices for a couple of minutes until fragrant (add a splash of water if it needs it).
  • Pour in the water or stock, rice, cinnamon, bay leaves, salt and cloves. Bring to the boil and the reduce to simmer fo 10 minutes with the lid on.
  • After 10 minutes, turn the heat off and leave for at least ten minutes to steam.
  • Fluff the rice up with a fork, remove the bay leaves, cinnamon stick and cloves and serve.

Notes

  • Feel free to use your favourite Indian spices to mix this dish up!
  • Give your rice a rinse before cooking to remove any dirt or extra starch. This will make the rice ultra fluffy.
