Mixed Berry Oatmeal

What you need for easy mixed berry oatmeal
- Oats
- Non-dairy milk
- Cinnamon
- Chia seeds
- Frozen mixed berries
- Maple syrup
Start by making your berry compote. This is super fast and cheap, but takes your porridge up a level. Pour the frozen berries and maple syrup (or brown sugar) into a frying pan and simmer over a low heat, and cook it so it reduces down into a syrupy compote. This is a basic recipe for porridge oats, so get creative and top with your favourite fruits, nut butters, seeds and sweeteners!
How to make mixed berry porridge
Now we can prepare our porridge oats. This is my go-to method. Start by adding the oats, non-dairy milk and water to a pan. I always follow a ratio of 1:2 for my porridge, for it to cook quickly, but you can up the liquid to make a creamier porridge cooking slowly over a lower heat.
I usually use oat milk to match the oats, but you can also try almond milk for a nutty sweetness, or unsweetened soy milk for higher protein.

Now you can add in the cinnamon to the pan for that warming flavour, and stir over a low heat.

Keep stirring the oats continuously over a low heat, as this is the key to perfect porridge, until all the liquid is absorbed. I like to take mine off the heat just before it reaches the perfect consistency, as it will continue to thicken once you’ve poured it into a bowl. At this point you can also stir through your chia seeds, if using. I prefer to do this towards the end so they don’t become too thick during the cooking process.

Finally, dish up the mixed berry oatmeal in a bowl, pour over the berry compote and an extra glug of maple syrup and some chopped nuts for added fat and protein, and enjoy!

This portion size can easily be adjusted according to your appetite, I usually opt for 1/2 cup of oats for a nice sized breakfast portion.
Lazy person hack: add the berries into the oats, instead of a separate pan, to save washing up (it also makes it a very pretty purple colour).
