Minty Mushy Peas

Make sure your mushy peas are as fresh and green as possible with this simple minty mushy peas recipe. Mushy peas are a definite love/hate side dish. I personally adore it, when done properly. Too often you get served a pile of mush, devoid of colour and flavour. I want to share how to make mushy peas taste delicious and look vibrant every time!

For the mushy peas we’ll be using:

  • 200g frozen peas

  • Handful of chopped mint

  • Drizzle of olive oil

  • Juice of half a lemon

  • 1/2 tsp salt

The key to a vibrant bowl of mushy peas is not to cook them. Simply thaw them from frozen in boiling water for 5-10 minutes, until they aren’t frozen anymore. The green colour of the peas disappears as soon as they become overcooked. From there we can add all the yummy flavour!

Use a hand blender, or a fork, to mush your mushy peas to your preference. I personally love some lumps as it feels more rustic and homemade! Adding in the lemon juice and olive oil makes it smoother, while the mint adds a delicious complementary flavour.

Ingredients

  • 200 g frozen peas
  • 1 handful mint (chopped)
  • 1 drizzle olive oil
  • 1/2 lemon (juice of)
  • 1/2 tsp salt

Instructions 

  • Thaw your peas in boiling water for 5 minutes and drain.
  • In a bowl, add in the thawed peas, mint, olive oil, lemon juice, and salt. Mush together with a hand blender or fork, leaving a few lumps. Serve warm, or set aside in the fridge for serving later. Enjoy with my tofish fingers
