Marmite, avocado and mushroom toastie

Combining avocado and tomatoes with marmite and mushrooms makes this toastie a bit different, but full of unexpected and delicious flavour combinations. The combination of salty, fatty, and juicy really is the key to a successful sandwich. Ideal if you’re trying to include more plants in your diet, but still want to enjoy a midday sandwich. This works perfectly for breakfast, lunch or a snack!

All you’ll need is:

  • Bread

  • Marmite

  • Avocado

  • Mushrooms

  • Cherry tomatoes

  • Coriander

  • Hot sauce or chilli flakes (optional)

Start by chopping up the mushrooms and frying in a pan with a little olive oil, and salt and pepper until they’re reduced.

Meanwhile, spread vegan butter (my favourite is Naturli) on your bread on all four sides, and top one side with Marmite for saltiness. The Marmite makes this the perfect choice for breakfast too – I am a lover of Marmite, and have been since I was very little.

Now you can layer up the toastie, starting with the freshly sliced avocado, along with a squeeze of lemon juice to bring out the flavours. When your mushrooms are ready add them onto the avocado, and then top with the tomatoes.

Season with salt and pepper, add coriander, and then drizzle with an optional splash of hot sauce or a few chilli flakes (highly recommended – avocado and spice go hand in hand). Close the sandwich with the other slice.

 
Next, add a splash of olive oil to the pan or skillet (or a toastie maker if you have one) over medium to high heat. Fry the toastie on each side until golden brown, approximately five minutes. Slice in half and serve up crispy and hot.

Ingredients

  • 100 g mushrooms (sliced)
  • 4 slices of bread (or gluten free bread)
  • Vegan butter (to taste (or olive oil))
  • Marmite (to taste)
  • 1 avocado (sliced)
  • 1/2 lemon
  • 8 cherry tomatoes (sliced)
  • Salt and pepper (to taste)
  • Optional Hot sauce or chilli flakes (to taste)
  • Fresh coriander (to serve)

Instructions 

  • First, gently fry the mushrooms for 10 minutes until reduced.
  • Thinly spread vegan butter on all sides of the bread, and then Marmite on 2 sides of bread.
  • Slice the avocado and squeeze a little lemon over. Divide the avocado evenly on top of the bread slices.
  • When the mushrooms are ready, layer on top of the avocado, followed by the tomatoes. Season with salt and pepper, sprinkle over the coriander, and splash a little hot sauce or chilli flakes (if using). Close the sandwich with the other slice of bread.
  • In a frying pan heat a little olive oil over medium to high heat, then add the sandwiches to the pan. Fry for 5 minutes on each side until golden brown and toasted. Serve up crispy and hot!

Notes

  • Omit the Marmite if you aren’t a huge fan, as this will still be a delicious toastie!
  • Try different options for the mushrooms if you prefer - for example fried peppers, spinach, artichoke, or red onions
