Mango Mousse
This magnificant mango mousse is creamy and tangy. Made using creamy coconut cream, zingy lime juice, mango puree and garnished with fresh mint this 4 ingredient pud is a refreshing spoonful of tropical delight.
To make the mousse without eggs or gelatin is actually really easy. By using something naturally creamy like coconut cream you don’t need the eggs or gelatin normally required to set your traditional non-vegan mousse.
What you need for mango mouse

Coconut cream from 400ml tin of coconut milk*

1 cup of mango purée

Juice of a lime
-
Mint for garnish
Carefully take out the coconut cream from the top of the tin of coconut milk, leaving behind the water (this can be added to a smoothie or a curry), and add to a blender.
Add in the mango purée and the juice of a lime, and blend.
Give it a stir to remove any air bubbles and spoon into 6-8 small cups.
Spoon a teaspoon of mango purée on top of each mousse, and garnish with a sprig of mint.
Refrigerate for 1-2 hours to set the mousse and then serve!

- Add in the mango purée and the lime juice , and blend.

- Spoon a tbsp of mango purée on top of each mousse, and garnish with a sprig of mint.
- Refrigerate for 1-2 hours to set the mousse and then serve!

Notes
- If you can’t find mango purée in the shops, you can easily make it by blending some mango (frozen or otherwise), with a little bit of water if needed.
- Make sure to save the coconut water from the tins and use in another recipe later on! Would work best in a smoothie or juice.
- Try and opt for a more expensive tin of coconut milk - one that has the highest percentage of coconut to get that creamy part.

This looks so lovely, I am having some friends over on Monday and this would be the perfect dessert. May I ask if the mango puree you used is sweetened? Because I’ve seen both sweetened and unsweetened versions of it:)

Made this tonight and it was wonderful, i only had frozen mango but worked just as well. I added homemade blackberry jam on top. YUM!

This was amazing – very simple, but wow. Made it for lunch with family and they loved it. Used Biona coconut whipping cream as that was all I had and a tin of Mango puree
