Loaded Sweet Potato Fries


What you need to make Loaded Sweet Potato Fries
- Sweet potatoes
- Vegetable oil
- Cornflour
- Smoked paprika
- Oregano
- Onion granules
- Ground cumin
- Red chilli flakes
- Black beans
- Avocado
- Cherry tomatoes
- Spring onions
- Coriander and mint
- Jalapeños chilli
Serve with
- Vegan mayonnaise (omit this if making this recipe soy free)
- Sriracha
- Wedges of lime

How to make this recipe
Before you begin, pre-heat your oven to 200°c.
Chop your sweet potatoes into chips or wedges lengthways. Grab a large bowl and throw in the sweet potatoes and mix together with vegetable oil, cornflour, and herbs & spices, and season to taste. Toss everything together to combine.

Pour the spiced sweet potatoes on a lined baking sheet (you may need 2 baking sheets) and spread out. Bake in the hot oven for approximately 25-30 minutes, until soft. Turn in between to ensure an even cook.

Once your sweet potatoes are soft, remove the tray from the oven and sprinkle over the black beans and some vegan cheese (if using) over the chips on the tray. Bake for 5 more minutes or until the vegan cheese melts and the beans are warm.

Transfer the sweet potatoes and black beans onto a large serving platter and load up with the chopped tomatoes, sliced avocados, spring onions, and fresh coriander. Finish with a drizzle of vegan mayonnaise, sliced fresh chillies and lime wedges for the perfect crowd-pleasing sharing dish.

Ingredients
- 700 g sweet potatoes (sliced into chips or wedges lengthways)
- 2 tbsps vegetable oil
- 1 tbsp cornflour
- 1 tsp smoked paprika
- 1 tsp oregano
- 1 tsp onion granules

- 1/4 tsp red chilli flakes
- Sea salt and black pepper
- 400g tin black beans (drained and rinsed (can be subbed for pinto or kidney beans))
- (Optional) Vegan cheese (grated)
To serve
- 4 spring onions (sliced)
- 8 cherry tomatoes (halved)
- 1 avocado (sliced)
- 2 tbsp of fresh coriander and mint (finely chopped)
- 2 tbsp vegan mayonnaise (drizzled)
- 1 lime (cut into wedges)
- 1 red chilli (sliced)
Instructions
- Pre-heat oven to 200°C.

- Remove from the oven and sprinkle over the black beans and grated vegan cheese (if using) over the chips on the tray. Bake for 5 more minutes or until the cheese melts and the beans are warm.
- Take the sweet potatoes out of the oven and serve up on a large platter. Load up with the tomatoes, avocado, spring onions, coriander and mint. Finish with a drizzle of vegan mayo, red chillies and fresh lime wedges

Notes
- You can make this recipe with normal potatoes too! My favourites are Maris Piper for how soft they are. These potatoes would benefit from parboiling to help them cook a bit faster and become more soft in the oven.
