No Bake Goldenberry Energy Balls

These vegan no bake goldenberry energy balls are so easy to make – you can whip them up in a few minutes and they just need to be left in the fridge to firm up. They’re made with goldenberries, also known as amour en cage (‘love in a cage’) named for the papery calyx that encases the fruit.

They are packed full of antioxidants which are known to protect against damage caused by free radicals (the atoms that cause aging and disease). I got my goldenberries from Nature’s Heart (Holland & Barrett) but you can also get them from places like Planet Organic.

To make the no bake goldenberry energy balls you start by gathering your ingredients, blitzing them in a food processor and rolling them into small balls.
Now transfer your goldenberry energy balls into the fridge to firm up for an hour or two. No baking involved!

Then you get your cacao powder and roll them around so that the goldenberry energy balls are nicely covered.
And you’re done! I told you it was easy. I love making these for a quick snack before the gym or with a cup of tea if i’m hungry before lunch.

Ingredients
- pumpkin seeds
- cacao nibs
- dried goldenberries
- chia seeds (optional)
- maple syrup
- rolled oats
- vanilla extract
- orange (optional)
- coconut oil (melted)
- cacao powder to coat balls

How to make Goldenberry Energy Balls
Soak the dried goldenberries in boiling water for about 10 minutes and drain the excess liquid.
Add all the ingredients to a food processor and pulse until combined.
Roll into small firm balls and place on parchment paper. Set in fridge for 1-2 hours.
Sift the cacao powder into a bowl, remove the balls from the fridge, and roll each one in the cacao powder. Store in an airtight container in the fridge.

- 30 g cacao nibs
- 50 g dried goldenberries
- 2 tbsp chia seeds (optional)
- 25 g maple syrup
- 100 g rolled oats
- 1 tsp vanilla extract
- 1 orange, zest of (optional)
- 25 g coconut oil (melted)
- 2 tbsp cacao powder (for coating)
Instructions
