Creamy Vegan Nacho Cheese

Slather this vegan nacho cheese on nachos, use as a dip for your tortilla chips, or pour it straight into your mouth. This is one of my favourite dips to use for homemade nachos. Deliciously creamy, moreish and cheesy!

What you need

  • cashews
  • garlic clove
  • plant milk
  • nutritional yeast
  • chilli flakes
  • paprika
  • lemon
  • jalapeños

How to make creamy vegan nacho cheese

Soak the nuts in boiling water for an hour.

Drain and rinse the nuts, then add to a blender with the rest of the ingredients.

Blend until smooth and saucy, and top with the jalapeños.

Eat hot, or leave to cool!

Again, adjust the amounts of spice, and milk, depending on the flavour and consistency you like

Ingredients

  • ½ cup cashews
  • 1 small garlic clove
  • 250 ml plant milk
  • 15 gm nutritional yeast
  • ½ tsp chilli flakes
  • ¼ tsp paprika
  • ½ lemon (juiced)
  • ½ tsp salt
  • pepper (just a pinch )
  • jalapeños (chopped for the topping)

    Hi Olivia,
    I tried this recipe, because I thought it looked super yummy. Sadly the recipe did not work at all. The sauce was super liquid and not creamy at all. I do have a high quality stand mixer, that I used for the recipe, so I think the ingredients got well mixed up. Do you have any suggestions why the sauce was so runny? I would love to make the sauce again, because the taste was really good!

    I agree with Hannah. This recipe made a super runny liquid. I’ll try to make it with twice this much of cashews or half the milk. The taste is very nice though x

    I made this recipe with my partner and we loved it! We did end up adding a bit of cornstarch and cooking it on the stove a little to thicken it up and warm it, but it was delicious! 🙂

    When I made it, mine was runny as well (adding cornstarch really did help!)
    Afterwards, I rewatched the video, and it looks like the measurements might be reversed:
    – 1 cup soaked cashews
    – 0.5 cup plant milk

    I’ll try that next time. Regardless, really great taste!
