This Creamy Kale and Potato Gratin is a deliciously simple way to enjoy wholesome ingredients in a warm and satisfying dish. With tender potatoes, nourishing kale, and a smooth, dairy-free sauce, it’s a perfect balance of comfort and nutrition.

The star of this dish is kale. Packed with vitamins A, C, and K, along with antioxidants and iron to support overall health. Known as a superfood, this gratin is a tasty and inviting way to include such a healthy green in your diet.

Using vegan natural yoghurt along with creamy vegan cheese, makes this gratin super easy as there is no need to make a separate cheese sauce.

Ideal as a hearty side, this recipe is easy to prepare and full of flavour. Whether you’re cooking for yourself or sharing with others, this gratin is a great way to make the most of simple, plant-based ingredients. Let’s get started!

What you need to make this creamy kale and potato gratin

  • kale
  • new potatoes
  • onion
  • garlic
  • vegetable stock
  • vegan natural yogurt
  • vegan cheese
  • nutmeg
  • oregano
  • Panko breadcrumbs

Substitution and Ingredient Notes

Kale: You can change the kale seasonally for another leafy green such as swiss chard, collard greens, broccoli or spinach.

New potatoes: If you can’t get hold of new potatoes (sometimes called baby potatoes) try looking for other small potatoes such as red potatoes . Alternatively you can use any kind of potato that’s smaller in size.

Vegetable stock: My favourite brand is Kallo as you can find them in all supermarkets!

Vegan natural yogurt: Opt for an unsweetened yoghurt for this recipe, and preferably not coconut as it has a stronger flavour. I used Alpro plain no sugars soy yoghurt.

Vegan cheese: Any dairy-free cheddar or mozzarella-style cheese will work for this recipe! My favourite is the Cathedral City plant-based range.

Nutmeg: Ideally use fresh grated nutmeg as it’s much more flavourful, but ground nutmeg can be used too.

Oregano: If you don’t have oregano to hand, you can substitute for another similar dried herb like Basil or Parsley.

Panko breadcrumbs: Most supermarkets stock panko breadcrumbs these days (I always have some in the pantry), but you can also use regular breadcrumbs. Just blitz up the ends (or middles) of some old bread. Any excess can be stored in the freezer for easy access in the future!

Serve with

I love this creamy kale and potato gratin recipe because you can enjoy simply as a main. But it also makes the most delicious vegan side. Why not try with:

How to make Creamy Kale Gratin

You want to start by getting the oven nice and hot, so preheat to 180ºC/350ºF.

Now that the oven is warming, bring a pan of salted water to the boil, and add the sliced potatoes. Parboil for 10 mins then drain and leave to steam.

Meanwhile, add the olive oil to a pan, then throw in the onions and garlic. Cook  until the onions have softened, add the kale, vegetable stock, 1 tsp of the oregano and season to taste. Cook on a low heat for about 8 to 10 minutes until the kale has softened.

Next, remove from the heat, and then add the potatoes and vegan yoghurt together along with half the vegan cheddar. Stir through to combine. Finally, grate the nutmeg over and stir through.

For your topping, mix the breadcrumbs with the remaining cheese, and the remaining oregano.

Then spoon the kale and potatoes into a large gratin dish and sprinkle the breadcrumbs over the top, drizzle a little olive oil to help it crisp up, and give the topping a final season.

Then bake in the oven for 35 minutes until the top is golden brown. Enjoy warm straight from the dish!

Ingredients

  • 250 g kale (tough stems removed and roughly chopped)
  • 200 g new potatoes (thinly sliced)
  • salt & black pepper
  • 2 tbsp olive oil
  • 1 onion (chopped)
  • 2 cloves garlic (grated)
  • 200 g vegan natural yogurt
  • 120 g vegan cheese (grated)
  • good grating of nutmeg
  • 1.5 tsp oregano (1 tsp for the kale mix, and ½ tsp for the topping)
  • 50 g Panko breadcrumbs
  • 200 ml vegetable stock

Instructions 

  • Preheat the oven to 180ºC/350ºF.
  • Bring a pan of salted water to the boil ,and add the potatoes. Boil for 10 mins until cooked through. Drain and leave to steam.
  • Meanwhile, heat olive oil in a pan and add the onions and garlic. Cook for a few minutes until the onions have softened, then add the vegetable stock, 1 tsp of the oregano and season to taste. Cook on a low heat for about 8-10 minutes or until the kale has softened.
  • Remove from the heat and add the potatoes, grating of nutmeg, vegan yogurt and half of the vegan cheddar. Give it a good stir to combine
  • Mix the breadcrumbs with the remaining cheese and remaining oregano.
  • Spoon the kale and potatoes into a large gratin dish, and sprinkle the breadcrumbs over the top. Now drizzle a little olive oil across the top and season to finish.
  • Bake in the oven for 35 minutes until the top is golden brown.

Notes

This is quite a flexible recipe. You can adapt it as you see fit. Fancy more potatoes and less kale? Tweak the ratio to your preference! 
Add some flaked almonds to the topping for an extra crunch
If you'd like a bit more spice, add some chilli flakes, paprika or even lemon zest for a zing.
