Creamy Garlic Mushroom Pasta
If you’re craving something comforting, creamy, and completely plant-based, this vegan creamy garlic and mushroom dish is exactly what you need. It’s perfect for those cosy nights at home or when you want a quick, delicious dinner without the fuss. The rich, savoury flavour of sautéed mushrooms combined with a garlicky, velvety cream sauce will have you coming back for seconds—no dairy needed! And it’s ready in just 20 minutes!
What you need

How to make creamy garlic mushroom pasta
Start by cooking your pasta. I’ll usually use linguine, spaghetti, penne or rigatoni, but you can go for anything you like. To make this recipe gluten free, you can sub for a gluten free pasta too.
Now we can chop our vegetables. Start by chopping the red onion and addding to a large pan with a drizzle of olive oil. Pan fry the onion until softened.
Next, thinly dice or mince and then add the garlic to the red onion and cook for a further 1-2 minutes.
Meanwhile, slice the mushrooms, then add to the pan. Stir them in occasionally until they start to shrink and soften. For something different, you can also swap the mushrooms for courgettes, broccoli, tomatos, or peppers for example.
Once the pasta is done, drain and add to the pan with the onion, garlic and mushrooms. Save a little of the pasta water, and add this in too to help the sauce become slick and creamy.
Now you can pour in the non-dairy milk (I usually use soy or oat), and tahini, along with the lemon juice, parsley, nutritional yeast, salt and pepper. Be careful not to overheat at this point, just mix through over a gentle low to medium heat until thickened. Tahini is such a good plant-based ingredient to have in your fridge at all times, as it creates a rich and creamy sauce that can be whipped up fast.
If you have access to soy cream, then you can switch out the soy milk and tahini combination for this (though it may be more expensive). I enjoy using ingredients I usually buy/have in my pantry to make things easier and more affordable over all, but it might be a nice option you can give a go.
Serve up with some extra parsley, my vegan parmesan and enjoy!

Creamy Garlic Mushroom Pasta
Ingredients
- 300 g pasta (my favourite for this is linguine or rigatoni (or gluten free alternative) )
- 1 red onion (chopped)
- 4 garlic cloves (grated)
- 300 g mushrooms (sliced)
- ½ lemon (juice of )
- 250 ml non-dairy milk
- 3 tbsp tahini
- Handful of parsley (roughly chopped )
- 2 tbsp Nutritional yeast
- Salt and pepper
Instructions
- Start by adding the red onion to a large pan with some olive oil. Fry until softened.
- Then add the garlic to the onion and cook for a further 1-2 minutes.
- Next, add the mushrooms to the pan and cook until reduced, for around 5-10 minutes.
- Meanwhile, put the pasta on to cook in a pan with salted boiling water. When al dente, drain the pasta, saving some pasta water. Then add to the pan along with the onion, garlic and mushrooms and a splash of pasta water.
- Finally, over a low to medium heat, stir through the non-dairy milk and tahini, along with the lemon juice, parsley, nutritional yeast, salt and pepper. Warm until thickened, taste and adjust seasoning, and enjoy topped with some extra parsley.

- If you fancy a bit of heat, why not add a sprinkle of red chilli flakes over the top when serving.
- This would work well with all different varieties of pasta shapes, such as tagiatelle or spaghetti!

If it splits I think you might have heated it too fast and/or boiled it for too long. Try again, and next time, be a little more gentle with the heat 🙂

I’m eating it right now and it’s so yummy! The fragrance of mushrooms do thier jobs! It’s much flavourful more than I thought it would be. Likely…Tahini doesn’t have much of a taste but peanut butter has quite a strong peanut flavour.

You can use any milk you like. Soy milk is generally more creamy than say almond milk though, so you might want to add a little extra tahini if you use almond milk. Just use the milk you have, and adjust with more/less milk/tahini until you get the desired consistency

You can fairly easily make your own oat milk by blending oats and water in a high speed blender. Perhaps with a little salt and/or oil as well. You’ll find more detailed recipes if you google "homemade oat milk"

I added asparagus and baby peas with the mushrooms to brown a bit – I also used a soy based creamer instead of soy milk, a decent amount of nutritional yeast and thyme instead of parsley.
Easy to switch things up a bit but so so good. My partner and I are just easing into the plant based diet and this is a total dupe for dairy cream pasta. Love it!

This may seem like an odd request but is it possible to post the measurements in cups as opposed to grams, I am trying to find out what these measurements of these ingredients convert to by going to different websites and I keep getting different cup measurements. I’m guessing it’s the pasta and mushroom measurements you want on cups, right? This recipe makes four servings. So just cook however much pasta you usually cook for four servings, maybe a little more to make sure you have enough to get properly full 🙂 And then you take an equal amount of mushrooms. If you really like mushrooms, add some more. If it’s not your favorite food, take a little less 😉
