Cheap Vegan Chilli Sin Carne

Try my cheap vegan chilli sin carne. Minus the meat, with all of the flavour, for only 75p per serving. This is a super simple version of chilli that you’ll be able to put together easily any day of the week with simple household ingredients. Full of so many delicious nutrients, high in protein, and a great way to batch cook or meal prep.
What you need to make cheap vegan chilli sin carne
- onion
- garlic cloves
- olive oil
- red chilli
- red pepper
- cinnamon, cumin, paprika and chilli
- kidney beans
- chickpeas
- chopped tomatoes
- rice
- lime, coriander, avocado and nutritional yeast
How to make cheap vegan chilli sin carne
First prepare your vegetables and chop the onion and garlic and add to a large pan over medium heat with a dash of oil until softened and fragrant (isn’t this the best smell?)
Now you can chop a red pepper, and finely chop a red chilli. These can then be added into the pan along with the softened onio and garlic.

Fry the cinnamon, cumin, paprika and chilli for a 5 minutes until the aroma of the spices fills the room. A top tip is to add a splash of water if it is needed and you find the spices are sticking. This creates a paste to help the spices cook.

While your spices are frying, drain and rinse the beans. This is a key step to avoid bloating! Always rinse your beans thoroughly.

Then pour in your chopped tomatoes and stir everything through to mix tgoether. Fill one of the tins up half way with water and add to the pan for extra liquiud (I always do this when adding liquid to save on extra dishes and washing up!)

Finally season the chilli with salt and pepper, stir and simmer for 30-40 minutes until reduced. You could cook for even longer if you like in a slow cooker to really deepen the flavours.

While the chilli cooks, prepare and put your rice on top cook, chop your coriander and slice the avocado.

Serve the chilli with the rice, coriander, avocado, a squeeze of lime and some nutritional yeast or vegan cheese.

Then adjust the spices according to your preference, adding more chilli for an extra kick.

Cheap Chilli Sin Carne
Ingredients
- 1 onion (chopped )

- 2 tbsp olive oil
- 1 red chilli (finely chopped)
- 1 red pepper (chopped)
- 1 tsp cinnamon
- tsp cumin
- tsp paprika
- 1 tsp chilli
- 1 tin kidney beans (drained and rinsed )
- 1 tin chickpeas
- 2 400ml tins chopped tomatoes
Serve with
- Rice
- Lime (a squeeze, or wedges. (optional))
- Handful of coriander (chopped)
- 1 avocado (sliced)
- nutritional yeast or vegan cheese (sprinkled/grated)
Instructions
- Heat a large pan over medium heat with a dash of oil. Add the onions, garlic, red pepper, along with the spices. Fry for a 5 minutes until the aroma of the spices fills the room. Add a splash of water if needed.
- Add the beans as well as the chopped tomatoes. Fill one of the tins up half way with water and add to the pan.
- Season with salt and pepper, stir and simmer for 30-40 minutes until reduced.
- Meanwhile, cook your rice according to the packet.
- Serve the chilli with the rice, coriander, avocado, a squeeze of lime or lime wedges and some nutritional yeast.
