Best Ever Baked Vegan Apple Fritters

How to make vegan apple fritters
First, prepare your apples by peeling and chopping. And then add a little fresh lemon juice to the apples, stir, and set the aside. This keeps them from browning.
Preheat the oven to 220°C/420 °F, and line 2 baking sheets with parchment paper or a silicone mats.
Combine the flour, sugar, salt, baking powder, ground cinnamon in a bowl. Then in a separate bowl mix the milk, melted butter, vanilla extract, and apple sauce.
Next, add the wet ingredients to the dry ingredients and stir to combine. Then simply fold in the apples.
Now our fritter mix is ready, we can set them on our prepared baking tray. Place a heaped tablespoon of the batter onto the baking sheets, and then repeat until all the batter is used.
Then, place in the oven and bake for approximately 20 minutes, until golden. During, make sure you keep an eye on them as ovens can vary.
Instead of frying, baking them makes them less oily, and more fluffy on the inside. Plus, in my opinion, a lot simpler!
Once they are golden brown, remove from the oven, leave to cool for 5 minutes, and then place on a cooling rack to fully cool.
Meanwhile we can prepare our sugary coating. For this, mix the icing sugar with cinnamon, then stir in the remaining lemon juice, maple syrup and add enough water until you get a thick glaze. This should taste divine and is the perfect topping to compliment our apple fritter bites.
Once the fritters are cooled, drizzle with the frosting all over. Then allow the glaze to drizzle off the fritters and set a little, then serve.
Alternatively, you can coat them with a mix of cinnamon and sugar by tossing in a bowl, or serve them warm using the icing as a dip. To note: you need to achieve an internal heat of 210°C for the fritters to be fully cooked through.

Best ever Vegan Apple Fritters
Ingredients

- 1 tbsp maple syrup
- water (splash if needed )

Just made these and oh my, they are delicious! Did not have vegan butter, but coconut oil worked well as a substitute. Opted for the cinnamon sugar bath instead of the icing. Definitely will make these again!

If you do you’ll need to add baking powder!
