Asparagus Breadcrumb Linguine

This Asparagus Breadcrumb Linguine recipe is one of my favourite summer suppers. Zesty lemon, perfectly in season asparagus and vibrant cherry tomatoes all make this pasta dish irresistable.

What you need to make Asparagus Breadcrumb Linguine
This recipe takes inspiration from beautiful Italian flavours, but you can easily swap out ingredients to suit your diet. To make this vegan pasta recipe gluten free, just use your favourite gluten free linguine and breadcrumbs/bread.
- Linguine (I normally get mine from Riverford, but I also love De Cecco)
- Asparagus
- Garlic cloves
- Cherry tomatoes
- Lemon
- Pine nuts
- Vegan creme fraiche or you can use coconut cream
- Breadcrumbs
- Chilli flakes
- Vegan parmesan

To start with, toast the pine nuts in a dry frying pan for a couple of minutes until lightly brown, remove and set aside.
Then, heat a tablespoon of oil in the frying pan, add the breadcrumbs and one of the cloves of grated garlic. Season with salt and pepper, and fry until golden brown. It should smell absolutely delicious. Remove the breadcrumbs and set aside until later.

Bring a large saucepan filled with salted water to the boil, and once boiling, add your linguine. Bring back the boil, stir to loosen the linguine and turn down to a shimmer. Cook until all dente for about 8-10 minutes (according to the packet’s directions).

Whilst the linguine is cooking, you can cook up your veg. Heat the remaining oil in the frying pan, and stir in the garlic. Cook for a minute and then add the chill flakes, handful of cherry tomatoes, and the asparagus.
Fry on a medium heat, stirring occasionally until softened. The oil, garlic and tomatoes should create a creamy fragrant sauce.

Once the linguine is ready, drain and keep a cup of the pasta water back. Add the cup of pasta water, lemon juice and zest to the frying pan with the veg, and stir through the drained linguine. You can add some vegan crème fraîche at this stage if you want a more creamy sauce. I love the Oatly crème fraîche.

Taste for the seasoning and adjust, adding more chilli flakes if you like an extra punch. Stir through chopped parsley or basil, leaving some to garnish. Serve sprinkled with some vegan parmesan, and finally the basil and parsley, toasted pine nuts and breadcrumbs.

- 75 g fresh breadcrumbs (use GF bread for GFO)
- 3 garlic cloves
- salt & pepper
- 350 g linguine (use GF pasta for GFO)
- pinch chilli flakes
- 1 lemon (zest and juice of)
- 1 handful cherry tomatoes (roughly 10)
- 1 bunch of asparagus (trimmed and cut into 4cm lengths)
- 3 tbsp vegan creme fraiche (or you can use coconut creme)
Serve with
- vegan parmesan (to serve)
- handful parsley (roughly chopped)
- handful basil (roughly torn)

- Once the linguine is ready, drain and keep a cup of the pasta water back. Add the cup of pasta water, lemon juice and zest into the frying pan with the veg. Stir through the linguine. You can stir through some vegan crème fraîche at this stage if you want a more creamy sauce (I love Oatly's).
- Taste and adjust the seasoning, adding more chilli flakes if you like, stir through most of the chopped parsley and basil, leaving some to garnish.
- Serve sprinkled with some vegan parmesan, toasted pine nuts, extra herbs and the breadcrumbs.

Notes
- This recipe will work with other pasta shapes too, or even gluten free pasta for a gluten free-friendly dish.
- Try a different main vegetable, such as tenderstem broccoli, or sliced courgettes.

This recipe is utterly delicious. My meat eating husband thoroughly enjoyed it too. This will be a firm favourite for us. Sorry no picture of mine as I’d eaten it all before I thought about it 🤣. Definitely add the creme fraiche as it makes a delicious sauce. Along with all the toppings including the vegan 😀😍
