Apple Crumble Overnight Oats
Apple crumble for breakfast? Yes please! Apple crumble is a classic British dish that I grew up eating and absolutely loved. During the late summer months, when apples are in season and the blackberries come out, you can enjoy the incredible dessert that is apple and blackberry crumble. This apple crumble overnight oats includes some of the flavours of a crumble, while keeping it simple enough for breakfast.

Non-dairy yoghurt (my fave is always coconut for sweetness)

Pecans (or any chopped nuts)

Start by prepping your basic overnight oats recipe. You can leave out the yoghurt if you prefer, as it isn’t totally essential. For this variation, first chop up your apple into small chunks, then add in the extra cinnamon and pecans. Mix together thoroughly.
You can save some extra apple and pecans for topping! Another fun idea would be to use a crumbled-up biscoff biscuit to top your overnight oats, to recreate the “crumble”. I’ve done this before and it was incredible.
Place in the fridge overnight to set. This will allow the chia seeds and oats to combine to create a delicious pudding-like texture.
I love to drizzle over extra maple syrup in the morning, for added sweetness!

Apple Crumble Overnight Oats
Ingredients
- 50 g rolled oats
- 1 tbsp chia seeds
- ½ tsp cinnamon
- pinch sea salt
- 100 ml non-dairy milk
- 2 tbsp vegan yogurt
- 1/4 tsp vanilla extract
- 1-2 tsp maple syrup
Apple crumble additions
- 1/2 apple (diced )
- 1 tbsp nuts (chopped. For example; pecans, or any you fancy)
- ½ tsp cinnamon (extra)
- 1 tsp maple syrup (to drizzle on top)
- 1 tbsp biscoff biscuits (crushed. (optional))
Instructions
- Mix the basic overnight oat ingredients in a glass, or if storing, a storeable container such as a jar with a lid, or tupperware.
- Next, add the diced apple (you can save a couple of pieces for topping), the extra cinnamon, the chopped nuts, and mix together.
- Add the extra apples on top, and the crushed biscoff biscuits if using.
- Set in the fridge overnight, or for at least 2-3 hours to set. Enjoy the next morning, perfect with an extra small drizzle of maple syrup on top!
