Apple and Cinnamon Granola

There’s nothing better to start your day with than the warm and comforting flavours of autumn with this vegan apple and cinnamon granola. Packed full of oats, maple syrup, nuts, seeds, dried fruit, apple sauce and cinnamon. Whether you’re enjoying it with your favourite plant-based milk, coconut yogurt, or as a snack straight from the jar, this homemade granola is both nourishing and satisfying. Easy to make and free from refined sugars, it’s the perfect wholesome breakfast to keep you energised throughout the day.
What you need

rolled oats

mixed nuts (eg. pecans, walnuts, almonds, hazelnuts, cashews)

mixed fruit (e.g sultanas,cranberries and chopped apricots)

How to make apple and cinnamon granola
Start by preheating the oven to 180°C/350°F, and prepare 2 baking trays with parchment paper or silicone mats.
Now to make the granola! Add the apple sauce, maple syrup, orange zest and coconut oil to a pan, and heat to melt. This will bind the granola ingredients together and make it sweet and zesty.
Meanwhile add the dry ingredients to a large bowl and mix well. You can mix this up and use a variety of nuts, seeds and dried fruits to keep it interesting. I like to change these ingredients up each time a little to add variety into my diet, and always keep the flavours new.
Pour the wet ingredients over the dry ingredients and combine thoroughly, taking care to make sure everything is coated.
Spread the granola mix in a single layer on the baking trays. Push everything down with a spatula or the back of a spoon (this will help it to form larger clumpy bits). Then bake in the oven and after 10 minutes, remove and stir. Press down with a spatula again at this point, as it helps those clumps to form, and cook for a further 10 minutes.
Take the trays out of the oven and let the granola cool for at least 10 minutes. Then you can store in an airtight container to enjoy with yoghurt, milk and fruit for breakfast, or as a snack out of the jar!
Note: Worth keep an eye on the granola when baking, to make sure it’s not burning, as ovens can vary. You can also add your dried fruits midway through cooking, to avoid these becoming too dry or burnt.

- 50 g sunflower seeds
- 1 tbsp cinnamon
- 150 g applesauce
- 2 tbsp maple syrup
- 100 g coconut oil
- 1 orange (zest of)
- 150 g mixed fruit (sultanas, cranberries and chopped apricots)
Instructions
- Preheat the oven to 180°C/350°F, and line 2 baking trays with parchment paper or silicone mats.
- Add the apple sauce, maple syrup, orange zest and coconut oil to a pan, and heat to melt.
- Meanwhile, add the dry ingredients to a large bowl and mix well. Pour the melted ingredients over the dry ingredients and combine thoroughly, taking care to make sure everything is coated.
- Spread the granola mix in a single layer on the baking trays, pushing down with a spatula or back of a spoon.
- Bake in the oven and after 10 minutes, remove and stir. Press down again with a spatula as it helps to get some crispy clumps form, and cook for a further 10 minutes.
- Take out of the oven and let the granola cool for at least 10 minutes before transfering to an airtight container.
